wait to 3 thousand for the first change or do it at 1 or 2 thousand the first time, then every 3 after that? what do you think?

Its your truck its your call. Me I did my first oil change around 3000. 22000+ on it now so next change will be with Amsoil.

I did my first oil change at 2500 miles, just before my first long tow. I will do the next one in a couple of weeks at 7500 and every 7500 after that. I use Rotella oil and either Mopar or Cummins filters.

First Oil Change

Just for the heck of it, I checked my owners manual and it specifies 7,500 for the first oil change based on my driving conditions. Is this correct? I know it doesn't hurt to change more frequently.

That is correct. 7500 miles between changes on HO's "B" schedule. The shorter interval is for CA.

I did my first oil change at 500 miles, the second at 5,000 miles, and now I plan to change it on 5,000 mile intervals. The reason I chose 5,000 miles over the 7,500 miles is that I do a lot of short trips and the 5,000 equates to roughly 2 oil changes a year.

I will change at 3k first time and 5k then after until 15k or so and then Amsoil every 11k.

We will change twice a year or about 5500 miles since we put so few on, but wanted to change after first big pull and before we went to every week pulling trailer up and down the mountain.

Oil Changes/Filters

I have a ways to go before the first oil change but was wondering what is the easiest way to change the filter.

I've seen folks on here prefer both ways. I do mine from the bottom. I use a strap wrench for the filter to get it loose and slide a 5 gallon bucket underneath to catch it. I like to work from underneath as much as I can because it helps protect my paint job from my seemingly endless clumsiness.

Buy one of those round "wrenchs" that fit the bottom of the filter. It's a lot easier to take it out through the bottom this way than to get it out the top IMO.
