I don't have my shop manual handy, but I think is says to check the oil shortly after engine shutdown.

This would put the oil level a little below the Full mark. After waiting overnight, just about all of the oil is in the pan, so the level will be above the Full mark.

Try to become familiar with where the levels are at shortly after shutdown and then after sitting over night.

Dipsticks are nothing more then a close approximation. Just do the coorect 11 quarts and dont worry if its over by a few MM. Otherwise do what the others mentioned above. Either mark the stick or just remember in your head what it looks like when it is full.
 
I have the 01 with 6 spd. Mine is the same way. I change my oil as you do and don't worry about it. I think you will find if you check it right after running it the level will be real close or a tad low. Mine uses no oil unless I work it super hard then it may go down a hair on the stick. I check it regularly for piece of mind. I change every 3,000 miles.

I just completed my second oil change. Dealer did the first one at 750 miles and I worked alongside the tech during the whole time, which was less than 30 min. When he put the plug back in the pan, there was very little trickle coming out, but there was some drip. He put exactly 1 qt. in the filter and then 10 in the engine. After I got home and checked it cold, it read about a quarter to half inch high over the full mark and it has stayed that way.

I changed the oil myself at 5k. I let it drain overnight and did not take off the filter until the next day. The filter came right off with no spilling... . the oil level was down approx. one inch in the case. I put exactly 11 qts. in the truck... . a little less than a quart in the filter so I could get it on without spilling, but I put in exactly 11 qts. , total. Dip stick reads right on the full mark either after a 2-3 minute wait to check, or stone cold.

I think it takes considerable time for all the oil to drain and siphon some out of the filter. I probably won't do it again like this in the future... . I just wanted to experiment because there have been so many posts on this issue. I did like the fact I didn't have any oil filter mess to contend with, but don't know how long it takes for the filter to siphon out so it won't spill over. Next time I'm going to try a one hour delay. Just go with 11 qts.

Were are you guys coming up with 11 quarts,my manual calls for 10,1 in the filter and 9 in the engine and it is right at the full mark every time,am I missing something?

I change my own oil every other oil change with Mopar oil filter and Dello 400.
In between, I have mine done at ProFleet, a 'Big-rig' oil changing place, with Dello 400 and Baldwin filters.
I just had mine serviced yesterday because my oil since I installed 'DD2's' seemed a little thin. It looks like a little fuel is getting in the oil after 7200 miles, so I'm going to change the oil at 5k now. I have 42k on my Black Beast.

My truck is a 2001. 0 6 spd, with about 14,500 miles on it. I change the oil as follows: fill the filter w/1 qt; install it, put 10 qts in the engine; run it a bit, shut it down, check dip stick after a decent interval... overnite sometimes. At this point, the oil level on the stick is about 3/16" over the "F" mark. To get the oil level right on the mark requires draining out about 1/3 to 1/2 quart. Is this ok, or should I keep the 11 quarts in there regardless of the level on the dip stick?
 
11 quarts is what it takes and the dip sticks are notorious for being wrong. Mine is one of the few that reads correct. They recommend either marking the dipstick or remembering where full is on it. I would not drain any oil out of the engine.

Mine takes 11. 5 quarts to put it on the line. I usually dump in a full 12 quarts, and that puts it past the line about 1/8 to 1/4 inch. (2001. 5, auto, 2wd)
