I'm just about done installing my pyro and boost gauges. With the probe on the exhaust manifold, what is the max safe temp to allow?

Do not sustain above 1350F.
I have seen 1600-1700F for very short times and alls well.
By no means am I saying you should push yours past 1350F.

TST #4 plate kit, 370 Diamond B injectors, Afc spring kit, Gov. spring kit,TST's fuel pressure adapter and 2 guage pillar mount, SPA EGT/Boost guage. Joe D's Sachs clutch is in.
 
There are lots of posts on this subject, and as I recall, 1350 is generally recognized as a safe "never exceed" temperature for pre-turbo. Some even suggest 1300 as an upper limit. For more back-up info on this, suggest you do a search using key word(s) such as "EGT gauge", "probe", or "temperature. " Good luck.
