I bought a set of BOSCH 275 injectors on EBAY last year and I've been very happy with them. My pre-turbo EGT's (going from memory here) are around 1,000F max. I have an early Edge "3-light" fueling box, similar to the current COMP type box they now have but with 3 settings not 5. On level 1, I can still tow without going above 1,300F sustained.
*edit-added: I can reach 1,500F on the pyro in level 3, the highest setting of the EDGE with these injectors! But in level 1, it never goes above 1,300F.
Level 2 and 3 are for 'hot-rodding' around. I never use those settings for towing because it'll just break something or destroy my clutch.
Overall, these injectors alone gave me as much of an increase as my EDGE box did on level 1 with the stock injectors.
There is a little more diesel smoke/soot, especially if the box is on 2 or 3 and it only smokes black for a few seconds until the turbo spools up. Then it's just a light haze once on boost.
My stock clutch has about 55,000 miles on it, most of that with the box and it's still going strong. I'm careful not to overpower it though because once you slip it bad, overheating it, it's gone.
Cold temps in the fall and winter are especially difficult because the intercooler is much more efficient with cool air. The extra power makes it easier to slip the clutch on cool/cold days.
To summarize, you can run 275s and keep your stock clutch.
Your EGTs will not damage the engine while towing.
The EPA will not send you nasty letters in the mail.
Here are some pics that I took while I was installing them:
