When you guys are on a trip and take the dog, do you have a garbage can and large shovel in the back of the truck?
Each vehicle has a dispenser box of good-sized baggies (you get used to the warm squishy feel, if you'll exchuse me for being graphic) and a pretty big resealable tupperware with a plastic trash bag inside. Kinda gross at first, but you develop a resistance to it, and when I'm touring the national parks, or even off-road 'wheeling, the LAST thing I want to step in is dog doo. So it just makes sense...

More to your point, when he's wet, he's going in back! MAYBE I'll open the slider... if he's REALLY wet, maybe not!
