I just purchased a RAM 3500 longhorn DRW 4x4. It has the Aisien transmission and 3.42 gear. I purchased it with the intention of purchasing a fifth wheel later. I will mainly use it for light towing (7x14 enclosed motorcycle trailer) and daily driver until then. I'm concerned about the 3.42 and the fifth wheel in the hills and mountains. I think truck is rated at 20,000.

I maybe in disagreement with others but, no you should not be concerned unless you are trying to tow at the maximum allowed limit of 39,100 LBS or a 31,000+ trailer.
The truck is rated to tow a 21,410 LBS trailer and a maximum GCWR 29,300 LBS. This is what FCA has rated your truck for and this agrees with the SAE tow guide. You can go online and search for this information under the RAM truck Body Builders Guide. Here is a link for the 2016 model year just change the year for your truck. https://www.ramtrucks.com/en/bodybuildersguide/2016/ramHD/
