The reason the dealers arent supposed to put plows on the 3500 drws is because any plow that clears the rear wheels will need to be 9ft wide. All the 9ft plows exc maybe the snow way will put the diesel excabs way over the legal front axle weight of 4850 up to 99. Even the 2000 and newer ones will be over the 5200GAWR too. Its a laibility reason thats it. Can the truck handle it YES,no problem. If you slam into someone on a snowy road,someones seriously hurt you are in big trouble if they have a good attorney. So is whoever installed your plow,they are just as liable . I personally run one of the heaviest plows out there at 980 lbs,my truck is way over the 5200lb weight rating. ,Im taking my chances with it,so are 1/2 the others on the roads in the snow. With the 2500's they can have a plwo prep package because they can take smaller 7. 5 and 8 ft blades,and still clear the rear wheels. I think there is a weight limit if 633lbs for my truck to be legal. That weight plwo will not hold up on a 7500lb truck IMO unlesss your doing your driveway only.
