It seems that the rear brakes on my truck are sticking. When I release the pedal, the truck jumps/lurches and it feels like the rear brakes are sticking. Anyone had this happen? Any tips would be appreciated before I tear into it.

If they are only sticking for the first few stops in the morning it's most likely due to flash rusted drums and high humidity, live with it. If it's happening all the time look for a leaking axle seal.
 
happens to me too

seems more likely when the humidity is high... just ride them for a hundred feet or so to get a little heat in them and seems to be fine after that until it sits for a while again.
