It's your choice, but GVWR isn't often a legally enforceable weight. It's a numbers game. The 3500 DRW and SRW have the same frame with higher ratings, as well as the same axles, and very similar suspension in the rear.
I try to keep my GVW under 12,200 since that was what the DRW was rated at for 3rd gens...but even then it's build for more when you look at FAWR+RAWR. My truck is currently hooked up to a TT, has 2 4wheelers, 2 generators, 30 gals of water, 7 gals of gas, and 2 chainsaws in the bed. My GVW is roughly 11,500. I did have to upgrade to 19.5's when I added the quads, but GVW isn't a number I let concern me.
