I gather there are varying hp ratings from 160 to 215 for the P7100. What makes the difference? Is it something integral to the pump not easily changed or is it simple to upgrade/turn up?

Lots of things are different from delivery valves to injectors. I believe the torque plates all have a similar fuel curve, but not sure on that.
 
From what I was told during my 15 minutes of chat time with a Bosch tech the other day, the main difference is simply the stroke of the plunger due to a different cam profile (the new pumps have longer strokes) and the cut of the helix on the plunger. He said all the P7100s have the same size barrel and plungers (12mm). Other than that, they are all pretty much the same pump.



As JGheen said, changing delivery valves, torque plates, etc. can cause more fuel to flow at different throttle positions and revs. But the pumps themselves are very similar.



I've never taken one apart, so I can't confirm or deny.

They will all eaislily pump more fuel than you can use unless you are ported, twined, Etc. Delivery valves should probably be at least 181's to use lots of fuel. Also the plate the injectors & timing and airflow mods need to be done to use the fuel. The P7100 can pump serious fuel!
