Check out your local junior colleges some of them may have a diesel class also regional occupational training (ROP) is a good place to learn. you can also check into apprentice programs.
 
Alot of it depends on what your interested in working on. Over the road trucks, heavy equipment, diesel pickups all have there own area of training. Wyotech would be my first choice. If its heavy equipment, try to go to work on a apprenticship program for one of the equipment houses ( cat, john deere,case,etc. etc. ) They have some of the best schooling anywhere. I went to UTI about 30 years ago here in Phoenix. It gave me a basic knowledge, but the apprenticship thru the Operating Engineers shows what the real world is. Its all a matter of what you want to work on. I have a nephew that went thru the John Deere program at Eastern Az collage, He now works for Cat.
