:) How many people here have and use wood smokers?

I have one I got from Home Depot, New Braunfels series, I like it.

I use mine bout 3 or 4 times a month, I like to use cherry, apple, and Jack Daniels oak barrel chips. Most of the time when I fire up the smoker I use the wood pellets the kind you put in the tin foil, I did have some wood chip that you had to soak but ran out. The pellets seem to work pretty good what do you think?

I also use hard wood charcoal instead of the briskets, what do you like to use?

I like to use Almond or Oak. I use small branches and soak them for the small smoker. On the larger one I use 16" split logs soaked. Like to cook the meet at a low temp for a longer time that seems to make nice an tender and almost fall apart. :)

I have one. I like to use hickory and mesquite. I like a REAL heavy mesquite but not many others do so I tone it down a little. I use chips and chunks soaked in water. I also smoke the meat for about 24 hours at a medium temp to ensure tenderness.

We used pecan with just a little bit of mesquite thrown in. Probably 1 log of mesquite for every 5 logs of pecan. I've also used hickory on occasion.

Pecan seems to work well on brisket.
