Air-conditioner Freezes.

If the freon is low the pressure sensor will not allow the comp. to operate/cycle/etc.
Hence to ice.

You are right if the charge is low enough to activate the lo press sw and disable the compressor, but if not, the system will continue to operate at a less than optimal temperature/pressure and will surely freeze the evap coil, mine has done it many times.

I went through this exact same senario with my '03 3500.

Freezing evap. especially on high humidity days. NO air flow until it thawed.

relocated the probe in the evap... ..... problem solved.
