I went and picked up 2020 RAM 3500 HO this evening. First thoughts is how well it rides for a heavy duty truck compared to my F350.

The touchscreen console/radio/climate control isn't working already so it's going back in the morning. Pretty frustrating to buy $85k truck to have it stop working first 30 minutes.

Have you guys been seeing significant fuel mileage increase with engine break in?

Yes, fuel economy improves with extended break-in miles.
Mine got better at about 5K, and even better yet after 20K and 50K.
But, a big honking 4x4 dually is never going to get great fuel economy.
 
My '19 has seen 0.00% increase in MPG over 26K miles, unlike my '05.

What are you getting? I know it's a big truck and all that but I was expecting more than what my F350 was getting. I was seeing 14.4 on 50 mile trip flat ground not towing 55-65 mph.

Mixed @15 MPG. On two trips from AZ to OK to bring the toy hauler for warranty work, so half pulling and half empty, Trailer empty and dry @12K lbs. Pulling average 9.22-10.24, Empty average 14.24-15.3. Overall both trips 11.6-11.85. One empty tank just touched 16 MPG. Never saw that again.

I have been running Nitto Exo Grapplers from day one, so these may have an effect on MPG, but I have no baseline to judge against.

Hopefully this was not the sole reason for jumping ship. It would be akin to selling a Pete for a Kenworth and expecting to save money at the pump. They are tools designed to work.

Aside from that there could be many other factors that affect fuel mileage. Summer vs winter months and winterized fuel are huge factors. Gear ratios come into play whether towing or bob tail.
Ford gets a deserved bad rap for past platforms but the 6.7 has proven to be a pretty decent engine. Far better than anything they've had in the last 20 years.

If mileage was your main goal than a DRW was likely the wrong truck. None of the loads you mentioned towing require a DRW.

What gears on the new truck?

I can’t say that I’ve seen a mileage increase since I bought it with 3200 miles on it. Hit 27K yesterday.
 
Try resetting it. with truck running, press the volume control and menu button at the same time, and let it reset. May take a few to get er done.

Not sure what dealer orientation consisted of, but both last trucks sales person sat in truck with us, full demo, programmed our phones, called and texted.

Anyhoo, give the reset a try and let us know.
