How long has it been since you had the radiator last thoroughly cleaned? i dont mean the "super flush" type stuff you mix with hose water; taken to a shop, taken apart and rodded out. That will help your cooling quite a bit.

ALso, what kind of air filter set up do you have? At that HP/TQ, you need at least a BHAF, maybe an aFe Mega Cannon, et al. And get a 4" exhaust, esp if you tow a lot. I dropped 100deg or so peak EGT (empty), and I'm not even intercooled. I can still get her hot towing. I'd think if your EGTs are in check (<1250), you shouldnt have water temp issues; I never do, even if i keep the pyro at 1250-1300 for a mile or more. I think the 80% line you speak of is around 210deg- no emergency, but worthy of keeping an eye on it.

And, sad to say, you may just have to wait til the temp gets below 90 to go loaded drag racing. You're at 250% of the power the engine was originally designed for. 250% of the heat the cooling system was designed to take care of. You also might try a 2nd Gen radiator- according to my Chilton book, the cooling capacity of the 2nd Gens rivals that of the old 6. 9L V8 Fords- around 7 gallons. Compare that to 15-18qts for the stock 1st Gens.
