I've got a number of accessories that I will be installing with wiring that needs to pass through the firewall. For example, an Isspro electric oil pressure gauge with large connectors that need to pass (Isspro recommends a 3/4 inch hole!). I have used the large empty rubber plug just below the clutch to pass my boost pressure tube, but you can only pass so many things through that plug before it ceases to be a plug.

How are others passing their wiring? I'd like to make a watertight (or near-watertight) pass-through. Is there something I might find at a parts store to help?

good choice dieselpilot1969, I've only had to pass a couple, so I used the hood release cable hole.

It seemed less noticeable with the door open and came out higher in the engine compartment.

Easy. The boot where the steering shaft goes through gives you plenty of room to run wires through. In fact, you could probably run a 2" diameter bundle through there.

You should be able to pass more wires and stuff through the one hole you are already using than you could possibly need for accessories. Just cut a slit in the plug so you don't have to push the large connectors through it, just the wires.
