I replaced my DEF pump in my 2020 Ram 3500. I used the tool required but I modified it. It is very hard to do. I ground off one leg 1/2" to make it work. The ring is so hard to remove that I had to use 1/2" 3' ratchet. The floppy rubber tags are the level gauge. Just letting you know. I didn't want to wait 6 weeks for the stealer to do it.

Can I simply slide a hose down the fill hole and suck out the tank?

I'd certainly try it. Use a Mighty Vac or something similar, I used a hand held model with a small tube to suck out a few hundred cc of ATF from my AISIN last year when I slightly overfilled it.. worth a shot prior to dropping and unhooking things.

This is what I use for non oil based liquids, coolants, etc.

Diesel85, I have the same pump as that but I figured it was so small it would take a while to suck it all out. I was thinking about an electric pump. Bottom line is I need to see if a hose will drop to the bottom of the tank.

I ran a poly tube down over 24" and hit a stop. Nothing would siphon out so I blew into the hose and no bubbles, GRRRRR. Looks like a full tank DEF will hit the gravel.
 
That's what I was thinking also, its how I got ATF out of the AISIN dipstick tube, I used the same 500ml as Diesel85 for that job, I have several for different fluids, the syringe style is about the only way to get fluid measured and into the diffs on my CanAMs

It's impossible to siphon DEF out because of the small line to fill it. I had a full tank as well. I used a 10 gallon pan & caught most of it when I finally broke the ring loose.
 
I watched a youtube vid posted by TOO TALL??? He posted for a while on here. SO simple, just remove the fill tube from the tank by squeezing the two green taps and wiggle off. Bought a bubble primer with 32" poly hose on each end and started the flow and the full tank was empty in no time!!!
