Pretty hard to give a good diagnose from the distance.
I was wondering if clunking was was common on failing steering boxes.
You are right, straight line stops and starts.I can't imagine a steering box making the noise / clunk under the conditions that you describe. If a steering gearbox is having issues, it will almost always show up when the steering is being operated. It sounds like many times that you are hearing / feeling the clunk, you are just stopping in a straight ahead position - with no input from the steering wheel.
I think your issue is elsewhere. Is there anything heavy (that you are not aware of) that could roll in your truck bed, engine compartment, or even inside the cab that could be the source of the noise / clunk?
