We have a recipe that's been handed down in the family, for something we call "Corn Oysters"
Nooo! There are no oysters in it! I don't know why it's called that, but that's what somebody named it generations ago and I'm not going to break tradition! Maybe it's named that because you always want to eat them whole.
A Corn Oyster is basically a corn pancake, using the flesh of the kernels that you slice and scrape off the ear of fresh sweet corn. This is mixed with flour, cream and other ingredients and fried like a pancake.
When corn comes in season, we always have at least one meal of just Corn Oysters and sliced tomatoes. Mmmmm Goood
