Do you have an unusual way of preparing fresh sweet corn?



We have a recipe that's been handed down in the family, for something we call "Corn Oysters"



Nooo! There are no oysters in it! I don't know why it's called that, but that's what somebody named it generations ago and I'm not going to break tradition! Maybe it's named that because you always want to eat them whole.



A Corn Oyster is basically a corn pancake, using the flesh of the kernels that you slice and scrape off the ear of fresh sweet corn. This is mixed with flour, cream and other ingredients and fried like a pancake.



When corn comes in season, we always have at least one meal of just Corn Oysters and sliced tomatoes. Mmmmm Goood :)





Now, tell us about your family recipe that uses sweet corn. And don't tell us about corn on the cob, unless it's prepared in an unusual way. :)

Usin' Corn!

Old family recipe:



Go out deep in the woods, set up a fire under the copper kettle with the tubing commin' out the top, add some sugar and water, and let her cook fer awhile. While the cooking is going on set under the trees with a 12 gage and watch for revenuers!!

corn salsa

Something that's really good to munch on during the summer



mix 3 or 4 cans of corn (drained) with some jalapenos (pickled/sliced), diced tomatoes, diced onions, chopped cilantro, and garlic powder to taste. serve chilled. (eesa good, mane!)
 
This is true. When I was farming in CA I grew about 10 acres of sweet corn for a roadside market. Had this one guy who would come in with a pot and camp stove. His recipe was to bend the stalk down and cook the corn while it was still growing, said he liked it fresh. Sort of like cooking a live lobster.

Nearby here in Franklin County, used to be the revenooers would be helping to guard the site.

Apparently some panty-waists complained and the LEOs cracked down. Now it's darn near impossible to find the good stuff.

Do you think somewhere along the line you and I might just be related somehow? :D My Grandad was honored by getting himself arrested many years ago by none other than the late Buford Hayse Pusser of Finger, TN. for exactly the same thing as you mentioned!



As I understand it he was released due to a technicality. Seems Buford crossed over the McNairy county line into Hardeman county, and thus he was out of his jurisdiction. Just one more of several times that occurred as I recall. ;)
 
The corn was ready in this neck of the woods about two months ago. Here's the recipe I used for the corn in my garden this year:



Let the corn grow till it's about 2 days from pickin. Then let the raccoons climb the 7' fence and eat every dang ear!
