hi david,
not sure why you would want to get your gauge to go beyond 1100 and i can't really say that it is good or bad that it won't. did you mount the probe pre-turbo or post turbo? post turbo would display cooler temps. hopefully you should never see over 1100 post turbo.
the gauge should never go to zero,unless your truck sits outside overnight in 0 deg F temps. the normal low temp displayed on your gauge (after sitting overnight) should be whatever the ambient temp is. if its 70 in texas, then thats the lowest the gauge should read.
as far as having to tap the gauge, have you waited until getting up to say 35 mph before tapping the gauge, to see if it moves up on its own. it will not "jump" immediately after starting. it should move up slowly after about a minute to between 200 & 300 degreees (approx).
finally, was there a connection of the two thermocouple wires between the thermocouple and the wire leading to the gauge? if there were, you must use only the connectors provided by the manufacturer. if you were to add a crimp terminal or other connection device, or even add grease or corrosion inhibitors, you would alter the thermocouple accuracy.
