My two key fobs are functioning as advertised but seem to be overly sensitive to inadvertent contact. I believe that my only relief will be the disabling of that function.

I had a similar problem with the FOBs on my 2010 Town and Country. The root cause was the capacitive pads inside the remote had unattached from the outer rubber and had slipped. I've been limiting them along by periodically reattaching them with RTV to the rubber but the keep coming unattached. Really just need to bite the bullet and get new FOBs.

You might try opening up the FOBs and see if that is the issue. If you need to get new FOBs you can use AlfaOBD to program additional FOBs to the truck.
 
Had a Nissan a couple years ago, it was doing the same thing. Found out that at one point the key fob had gotten wet, and corroded something inside. Had to replace the key fob and the problem went away.

This is not a new issue. Yes the windows do roll down when the unlock is pressed a second time or is held down. The doors were programmed to unlock all four with one click. Today I reset the doors to unlock only the drivers door on the first click in hope that an accidental bump of the button will only unlock the doors and will not be held long enough to open the windows. I cannot carry the key fob in my pocket without this happening and even when I carry it on a belt loop with a carabiner I often find the windows partly open when I return to the truck.

Fortunately rain in this part of the country is rare but in the winter months I am afraid of finding the upholstery soaked. Durring the summer months it is only dust to clean out.
My wife has an '08 Town & Country van and I would find the sliding doors open occasionally. I determined that the fob in my pocket along with other keys was the culprit. I took some thin polypropylene (milk jug plastic) heated in an oven, could use a heat gun, until it is clear. I than formed it over the fob to make a cap. I trimmed it off so that it just fit the shape of the fob and ran the key ring through it to hold it in place. You can flip the cap out of the way to use the fob or even push through it. No more accidental openings. I worry more about steeling the vehicle than weather.

I just tried getting my new '19 to do this and it won't. I will look into some of the recent gadgetry posted above.

I ordered 2 spare key fob keys for my '06 from Amazon and had them ground by a local locksmith who told me the keys would work but I couldn't program them. I followed the programming instructions that came with the keys and they worked fine, They don't have quite the range of the OEM but cost only a few dollars including locksmith cost.
