Just going to drop this here....Sound quality is not good but it is interesting (boiling ribs on Diners Drive in and Dives).

Pretty interesting...Even Guy mentions apprehension of boiling meat. Folks I knew who boiled meat still ended up on the grill... they did it for two reasons... boil fat out so little or no flame up and to ensure meat gets done., particularly chicken
On rare occasions, mostly a being a little lazy, I will place chicken leg quarters (beef leg quarters to big) in a pan with some rub on them, broil them in the oven 30 minutes, turn them, drown in BBQ sauce, change oven from broil to bake, finish them for 30 to 40 minutes 350'. They taste pretty wonderful. This pretty much the only time use sauce.
I'm still committed to my style of smoking and grilling, but always happy to see other methods, including boiling. I like the way they flavor the meet and I guess the way they boil them it reinforces flavor, versus removing it.
