I am converting to a p-pump and a buddy of mine gave me a 160hp pump rebuilt 0 miles. My question is what can I do to the pump to get good fuel mileage and towing response, i routinely haul 6 or 7 horses up on the applachian mountains. Or should i just get a different pump. I am also buying a set of rv275 injectors what pressure should i get them popped at for the p-pump.

Trade the pump for a better version, contact one of the Companies that deal in the conversion-you are going to need them alot.
Personally I would not do that swap just for towing.

I'm not doing the swap for just for towing, I'm tired of replacing Vp44's. I think i can get a 180hp pump pretty cheap. I'm just trying to get everything setup before I actually put the pump on the truck.

The 180 is a better pump than the 160. The 911 is the better of the 180s.
Do some research, the swap is not that difficult but can be a royal pain if your not versed in the details.
The FASS150 may be up for the 45psi the Ppump needs? You'll need to plumb a restrictor in the return line to hold the pressure against the OFV of the Ppump.
The injector pop will affect timing as well as atomization and duration, all these affect MPGs.
PDP has one of the most complete listings for parts and crazy carls turbos has about the most complete kit for the money.
IMO, ditch the hx40 for best results and MPGs towing. the loose housing and large exhaust wheel make it fairly lazy for its size.
Your taller/aggressive tires arent helping MPGs either.
