I have the Mopar Premium soft tonneau cover. Never had any problems with people taking a peak at what's inside. However, I never leave anything of real value back there. If it's valuable... . it gets locked inside the truck. Security is one of the disadvantages of a soft tonneau cover.
I had an "Access" roll up tonneau on my '98 and liked it.
Have a "Truxedo" roll up on my '03, so far no problems with vandalism or thefts.
The great advantages of a roll up is if you have a 5th wheel, if you unhook you have the tonneau cover with you and also if you happen to buy a large item you can roll it up and transport that item.
Of course if I could swing it I'd most likely have a "RollnLock type.
I've never had a problem with my Extang Full-tilt. I like that if I want to I can take the whole thing off - frame and all - and have the whole bed open without dealing with the snaps.
If you park in the right place, someone can get into anything.
My dad has an Undercover hard cover that you can stand on. It tilts up just like mine and weighs only like 30 lbs or so. It can be easily removed like mine, but his has a lock on it. I think he paid around 700 for it. Here's some pics of his hard cover on his F150:
Access to my truck bed can be "accessed" only by slitting the Access roll-up tonneau with a pocket knife (it's certainly possible but fairly low risk unless somebody knows what's in there and wants it badly enough) or opening the tailgate, which I lock if there's something I don't want prying eyes to see.
