The best one for my own use that I have ever found is a four sided diamond hone witrh 200#, 300#, 400# and 600# grit sides. The sharpening surfaces are 2" wide and 6" long, it comes with a stand/holder that sits flat on table etc. Name on side is Diamond Life four sided knife sharpener. I bought the first one (I have two) at Shop Tools store in Pigeon Forge Tennessee. Second one I bought locally from an import store which I won't name because it causes flare-ups on here sometimes. :) bg PS: Strange you should ask, I was just sharpening my pocket knife which is a Bear by the way.

DMT Dia-sharp diamond stones. They come in coarse, fine or extra fine and are 3 1/2'' long by 1" wide. I've carried one in my pocket for the last 10 years and I use it every day.
 
A true knife nut would never consider a power sharpener. Pick your favorite stone and learn how to freehand, or maybe buy one of the "kits" that will help you hold your angle. If your too lazy to do your own carry a box cutter, then you can just replace it :)
 
I have not used an electric sharpener that really does a decent job, I've never tried an expensive one if there is such a thing because I'm too tight. I do have a Lansky that I bought over 20 years ago and it does a good job but as noted above, I guess I'm too lazy to use it. The diamond strips are just so convenient and fast that they are my choice, the bigger the better because I like to keep all my fingers intact and I don't like the sight of blood, especially if it's mine. :) bg

Chef choice #120. I used to believe in the hone it your self mantra for years. then I got a chef choice 120 and never looked back . it will make any dull knife sharp enough to shave in a couple minutes. if the knife is just a little dull a couple passes on the stropping blades and it`s razor sharp. the neat thing is my wife can sharpen the kitchen knives herself !! LOL !!!:-laf
 
I have a good sized Carborundum stone. It is two sided. I use it with ATF. It dont gunk up like most regular oils do.

It's good enough for straight razors, so it's fine for my pocket knife.
 
An old Oil stone by Behr manning and a Norton abrasives wet stone, use air oil on both stones. Old school but razer sharp and as quick as a diamond stone.
 
Been using a Spyderco Triangle for many years. I've sharpened HS lathe tools by hand with stones and used stones for knives early on. It doesnt take but a New York minute to lay on a razor edge with the triangle sticks.

If you have a knife made with a good alloy steel, you dont need to sharpen it very often. The best knife steel I've found is D-2. There are others. GregH

I don't like replaceable blades, too tinny,have time to grind rocks, too busy accessorizing and cleaning guns. . in case a knife nut gets out of hand!:-laf

Replaceable blades ? it depends on the cutting instrument Wyoming knife will open game like it had a zipper/and is replaceable blade
 
I have tried a ton of different sharpeners and have determined I am knife sharpening challenged. I can get it sometimes and other times I might as well cut a rock and hope for a sharper blade than I started with. There is a good video on Youtube of a guy sharpening his blade to razor sharp on a stone and some other tools. Amazingly sharp blade. He does shave with it at the end.

Crock sticks would be my favorite..... I like wet stones, too. I hone a lot of bits and such with my old carborundum stones... . I've got several OLD knives and straight razors I only sharpen with the carborundum. They are so hard, not much will sharpen them. They are Solingen steel from the era of 1900-1935. The crock sticks are used almost daily for my pocket knife, leather cutting tools, and twine knives. I like the older Case Chrome Vanadium blades for daily use. They'll hold an edge fairly well, and they'll sharpen in a moment with the crock sticks. I use a little steeper angle than most people recommend, but you have to keep that in mind so you don't nick the blade badly..... I've got some Green River, I think they are, filet and cutting blades I use for fish and leather work, and they work very well. I do usually sharpen my leather blades by stropping, but occasionally, when I'm cutting heavy leather for harnesses or headstalls, the blades need to be re-angled. The razors are so thin they work great for the leather, but can get nicked if you're not careful. I also like to use them when caping deer hides... ...



Oh, I like the chef's hones, too. They work great when we're cutting up game to go in the freezer, as you can just retouch the blades to get the edge you need without getting blood all over your leather strop!!

I use a coffee cup turned upside down. Stroke the knife blade on the exposed ceramic.

And my knives are sharp!
