It would take about two or three days of making sparks in the garage to whip up something to cover the ports. From the looks of it you will have no problem making something WAY less restrictive then the stock cast plenum.
Replacing all the sensors should not be a problem. I have a inoperable MAP sensor that I can send you to get started on placing it. Let me know if you want it. I might be able to come up with a IAT sensor too.
Just have to make sure you leave a "hump" in the new manifold to compensate for where the VP needs clearance.

The 53 block had only 2-3mm thick out block walls there. Cavitation could be to blame, but I blame it on a pour cast. The 56 & 55 block have a 6-7 mm wall there. I don't think there has been a single case of a 55 or a 56 block cracking.
