they weren't using the J 2807 tow rating test back then, so anything on paper is probably just a SWAG on Dodge's part

Tongue weight or pin weight is your biggest concern. You will reach that long before you reach a tow rating. Weigh the truck full of fuel and all your junk and then you can calculate the actual payload and how much weight you can put on the rear axle (most important).
