12V, does it bother you that your truck is rated for 30+k and factory and most after market hitches are rated 25k or less?

You would never tow a 30K 5er the pin would far exceed the RAWR. The 30K towing is for gooseneck applications.
To answer your question it does NOT bother me in the least.

Rams not being misleading in my book. Given they do not specifically come with hitches it is on the owner to choose the correct hardware for his/her needs. Would you try towing a 30k pound tag trailer with your Ram just because they say their trucks are rated for such? Again it is on the end user to see that they have the proper equipment to do the job.
A 25k lb 5th wheel camper carries roughly a 5k+ lb pin weight. Throw in passengers and misc and you are right at the payload limits of a typical crew cab truck. You may not be at RAWR but this is probably a case of Ram playing it conservative.
I am not aware of any 5th wheel campers that even eclipse 30k lbs, but if there was one it would likely be pushing the envelope of a 1 ton truck.

I agree with your last sentence. But I think you could (or should) also agree in the fact that regardless of what class truck we are talking a 5th wheel RV will have a higher pin weight than your standard load on a GN trailer and therefor a 5er rating should be lower than a GN rating. That is exactly what Ram has done here.
The movement of only an extra foot more forward could place extra TONS on the ball.
It is probably hard to overload a 5er to top out your RV GVW.
Your RAWR is what limits what you can tow on PAPRER. My RV is 23K, I max out my RAWR.
